Easy Stuffed Peppers

This stuffed peppers recipe comes from cousin Stacie. She enjoys cooking, but does not have the time with a very active 4 year old. So, quick and easy is her specialty.

You can use green, red, yellow as well as poblano peppers.

Ingredients

  • 3 pounds ground beef
  • 1 1/2 pounds shrimp (cut into pieces)
  • 1 pound crab meat
  • 1 small onion chopped
  • 1/4 bell pepper chopped
  • 1 celery stalk chopped
  • 2 green onions chopped
  • 2 cloves garlic chopped
  • 1/2 cup bread crumbs
  • 10 bell peppers for stuffing
  • Directions

    Cut bell peppers in half and parboil.

    When cooled, stuff peppers with stuffing mixture.

    Stuffing Preparation

    Brown ground beef and drain off liquid.

    Add seasoning and let fry about 10 minutes (with ground meat).

    Add crab and shrimp. Cook shrimp until they turn pink.

    Sprinkle bread crumbs into mixture to hold together.

    Season to taste with Season All or Tony Chachere

    Substitutions:
    You can substitute 1 pound ham for crab meat... IT'S ALL GOOD!!
