Cajun Dirty Rice Recipe

Rice is a stable in a typical New Orleans household. A traditional Dirty Rice Recipe is made with chicken liver and gizzards.

Variations include replacing the giblets with ground beef or sausage.

Granny Boutte uses a combination of both ground beef and chicken livers giving this favorite dish just the right flavor! Rice lovers will thank her!

Ingredients

  • 2 cups uncooked rice
  • 1/2 cup cooking oil
  • 1 pound chicken livers and gizzards
  • 1 pound ground beef
  • 6 green onions, finely chopped
  • 1 celery stalk, finely chopped
  • 1 small onion, finely chopped
  • 2 tablespoons parsley
  • Cayenne pepper
  • Salt to taste

  • Directions
    Cook rice according to package directions until almost done. Set aside. Do not use instant rice. This will cause the rice to become to mushy and cause complaints among the real rice lovers!

    Brown ground beef and giblets in cooking oil. Add celery, onion, and green onion. Cook until onion is tender.

    Drain oil from mixture. Add mixture to cooked rice.

    Garnish with parsley. Season to taste.
